The Client

John Holland is one of Australia's biggest construction and infrastructure companies. Their Rouse Hill site team wanted to put on a proper lunch for the crew. No speeches, no occasion. Just a thank you for the work.

It wasn't the first time, either. John Holland had booked us once before, for a crew lunch at a Silverwater site. This time the enquiry came through our staff appreciation catering page.

The Brief

Feed 220 people on a live construction site. One hour, 11:30 to 12:30, because a crew's lunch break is a lunch break and the afternoon's work doesn't wait. Halal, gluten free and vegetarian all needed to be covered.

And the date was that Friday. Four days away.

Booked in Three Days

The enquiry landed on Monday. We replied the same afternoon, Jay rang the site team to talk it through on Tuesday, and by Wednesday it was locked in. They'd looked at a few of our cuisines and settled on the Abu truck, which made the dietary side easy. Everything on that truck is halal, the snack packs are gluten free, and the falafel snack pack looks after vegetarians.

We also talked them into a short menu. For a crowd that size, three items moves a lot quicker than six. The final order was 100 chicken snack packs, 100 beef and 20 falafel.

On the Day

We rolled in at 10:30 with four staff on the truck. Site access was sorted ahead of time by their team, so there was nothing tricky about getting in and parked. An hour to set up, heat the fryers and get the meat going.

Service opened at 11:30. By 12:30, all 220 had eaten. That works out to a meal handed over roughly every 16 seconds for a full hour, which is about the pace we plan for on any construction site catering job.

The Fried Chicken Nobody Ordered

Here's the bit we're proudest of. John Holland ordered snack packs. We brought snack packs. We also loaded the truck with fried chicken that wasn't on the order, because in a crew of 220 there's always someone who just doesn't feel like a snack pack that day.

Turns out it was more than someone. About 30% of the crew went for the fried chicken instead.

Nobody asked us to do it. It's just how we like to run a day like this. If the whole point is to say thanks to your people, then every one of them should walk away with something they actually wanted to eat.
